What’s Cooking?
Here’s a recipe my 8 year-old brought home from her cooking class yesterday along with her specimen. To my surprise, the sandwich was very good and she was overjoyed that I ate it. Just passing it along if you wan to give it a try. It looks healthy:
Salad Pockets (2 servings)
Ingredients:
1 Whole Wheat Pita
Lettuce (ripped into bite-sized pieces)
1 Carrot (shredded)
¼ Red Pepper (chopped)
Croutons
1-2 Tablespoons Salad Dressing

Cut the pita in half to make two pockets

Fill each pocket with lettuce, carrot, red pepper, and 3-4 croutons

Pour approximately ½ tablespoon salad dressing into each pocket. Add more if desired
